Breakfast Egg Skillets?


Breakfast for me is like cleaning the toilet …it’s a task I would rather not have to tackle! I am trying very hard to incorporate Breakfast into my diet and my morning routine. 

I must admit I think this task is harder than getting on the treadmill every day. I don’t know why but for some reason I just can’t seem to find any creative juices when it comes to breakfast.  I have never been a big breakfast eater, yet I know that breakfast is essential in me losing weight and having energy throughout the day.

I have had many wonderful readers give me recipes and suggestions on how I can integrate breakfast in my life, but it still seems to be more of a chore for me than a meal.

A faithful reader that has come to know me very well suggested that I pick an ingredient I love like Cheese and work around that. Yes I am a cheese maniac. I like just about any kind of cheese including fat free. You don’t find many who even love fat free cheese huh? Gouda cheese is my favorite too bad they don’t make it in fat free!

She suggested that I make an Egg Skillet for breakfast each morning. Have you ever heard of egg skillet? I know they serve them at many breakfast oriented restaurants, but I never thought about making a breakfast skillet at home.  She suggested adding a few eggs, ham or breakfast sausage, bell peppers, onion, and of course cheese. Her words not mine… “The great thing is you can have a new breakfast skillet every morning it never has to be the same.”

What do you think? Do you have a favorite egg skillet recipe for me to try? I am open to suggestions and ideas that may help me make better choices in the morning or eat just help me eat breakfast in general in the morning. I would love to hear your ideas, recipes or even suggestions as to what I can add to my breakfast skillet.

I just saw a neat recipe where you core a tomato, line the bottom with spinach and cheese, put in an egg, bake it and then add cheese to the top when its done.
