As always I am extremely late for Menu Plan Monday. It’s only Monday … well technically Tuesday and I am already running behind. How is that even possible? I have been wracking my brain trying to come up with a plan for the week. To tell you where my mind has been in regards to menu planning we had sandwiches and chips for dinner Monday night. Easy… yes… healthy, not as healthy as I would have liked it to be. My anal need for veggies at dinner was not met. I had too much homework to be bothered with dinner. By the time I picked my head up from my work it was almost 9pm YIKES!
I am keeping this week’s menu very simple because my time is going to be very limited. I have a ton of homework due this week plus it’s our anniversary this weekend too. At least we will have a day away at the Texas Renaissance Festival (our annual anniversary tradition) to just have fun and relax, oh yes and I can’t forget eat! Fun food that is not only bad for you but taste great! Ha!
