Today is our first day back to school since Christmas. I am
ready to get back in the swing of things. Sometimes a hectic life is so normal
that it seems abnormal when life isn’t insane. I am praying for a good
semester.
Last week’s menu was a nightmare…. No really a nightmare! One
night dinner was late because we had some errands to run when we got home it
was after 8pm. The left over spaghetti sauce was defrosted by the time we got
home but the problem was there wasn’t enough there. It looked like more than
there was. No way could I feed more than
two people with it. Ugh! It was too late to come up with a plan “B” so we were
eating out.
A few days later a similar incident occurred. I took some
chicken tenderloin out of the freezer to have it the next night. Then I went to
bed and forgot about the tenders. The heater was blasting away all night. By the
time I remember the tenders it was almost 24 hours later and the tenders were
spoiled to the point they smelled. UGH! Yep out to dinner we went. Yeah it didn’t
go well last week.
I am hoping for better results this week. In an effort to
trim a few pounds off I am incorporating a lot more fruits and vegetables into our
menu this week. Our menu is also going to have a few soup recipes because it’s
going to be wet and cold all week. I love a good warm meal on a cold night.

Your menu plan looks great! I especially want to try that creamy chicken rice soup. I've been on the look out for a recipe for that for a while now! :)
Our menu plan was a flop last week, too. However, I did manage to avoid take out....so in my mind, it was a success, even if we didn't stick to the plan!
