Pinterest Fun Friday: Twice Baked Crispy Mashed Potatoes

 
 
 
 
 
I found this simple and delicious recipe on Pinterest a few months ago but sadly it doesn’t link to a site I can share with you because the link is now dead. I hate that because I like to give credit to the person who deserves it.
 
This recipe is delicious … No Seriously! Delicious! What makes it even better is the fact that it’s simple and uses leftover mashed potatoes. No waste or if you are making mashed potatoes you can make extra and save the leftovers for later in the week.
 
This is like a twice baked potato baked inside large muffin cups until each cup is crispy. You can use anything you would normally use in your baked potatoes or anything else you have on hand.
 
Ingredients:
 
  • 2 pounds of mashed potatoes (Leftover)
  • Butter
  • Sour cream
  • Bacon bits
  • Green onions
  • Cheddar cheese
  • Cooking spray

*Add whatever you like in your baked potatoes*

 
 
Directions:
 
  1. In a large bowl mix left over mashed potatoes with your favorite baked potato ingredients.
  2. Once everything is well combine spray muffin pan with cooking spray then fill each muffin well with the mashed potato mixture then bake at 400 for 30-45 minutes or until potatoes are brown and crispy.

Pinterest Fun Friday: Avocado Grilled Cheese

 
 
 
I originally found this recipe on Pinterest for a Avocado Grilled Cheese Sandwich but since then the link has gone dead. I couldn’t really tell you what was on the sandwich. I decided to take the concept and try to make my own. There are no rules so why not improvise? 
 
They turned out fantastic …who knew? This is a delicious and wonderfully rich sandwich. It’s cheesy, creamy, and decadent. Like I said it’s rich! I don’t think you could have more than one without paying for it dearly! This reminds me of something you would have at a high end deli or a vegetarian restaurant. If you love avocado and you love cheese this will be a crowd pleaser.
 


Serves 2

Ingredients:            
 
  • 4 slices 100% whole wheat bread
  • 1 medium avocado
  • 4 sandwich size slices mozzarella cheese
  • 2 large slices Smoked Gouda cheese
  • ¼ stick butter.

Directions: 

  1. Butter one side of each piece of bread, place a slice of mozzarella on each opposite side of the bread then top two slices of bread with half of a sliced avocado then top avocado with gouda, then place the opposite side of the bread with one slice of the mozzarella then place each sandwich on a hot griddle and grill until each side is toasted a crispy.
  2. Your sandwich should be one slice of bread mozzarella, avocado, Gouda, mozzarella then last piece of bread. 

*Please Note* if you are using smoked gouda verses non-smoked gouda the smoked gouda will most likely not melt which is the point of the two slices of the mozzarella cheese to seal in the avocado and gouda together into the sandwich. I highly recommend the smoked gouda.

Pinterest Fun Friday – Look What’s Growing In My Refrigerator




Pinterest is one of my favorite sites. I can spend hours just looking around at all the crafty and innovative ideas that people come up with. It’s actually a terrible place for me to waste a lot of time. I can’t tell you how much inspiration I get from Pinterest and how many different pins I have tired. Each Friday I like to feature something I have crafted, cooked, or found on Pinterest that I love! 

I found this really fun idea on Pinterest and decided to see if it would work. The concept is to keep growing your own green onions  without having to buy more. My thought was… for sure it doesn’t work. I have found many things on Pinterest that don’t work as they claim. (Pinterest Post)

I used up some green onions one night and decided to save the bottoms and give it a try. You place the bottoms (the part with the roots) in a glass with about 1 inch of water in it. Then put them on the counter and watch them grow. It only takes a few days to see results. For someone who is impatient like me this is key.

I had two problems with this… one … my cats ended up eating them so I had to throw what was left in the trash and the flies showed up to roost on them too. Double FAIL!
BUT they did grow and they grew VERY well.

I decided to try something a little different and instead of putting them on the counter I decided to leave them on the top shelf of the refrigerator. They grew like a charm. As you can see above they are beautiful! Not only do they stay nice and fresh as long as you change the water every few days, but they keep on producing fresh green onions a no additional cost! 

I love this concept! It’s fun and it’s free!

Pinterest Fun Friday – Frozen Yogurt Berries



Pinterest is one of my favorite sites. I can spend hours just looking around at all the crafty and innovative ideas that people come up with. It’s actually a terrible place for me to waste a lot of time. I can’t tell you how much inspiration I get from Pinterest and how many different pins I have tired. Each Friday I like to feature something I have crafted, cooked, or found on Pinterest that I love! 

This is a great low calorie snack especially with spring and summer approaching. It’s easy to make, easy on the wallet, and taste delicious! What more can you ask for. 

Ingredients:
  • 1 Small Bag of Frozen Mixed Berries
  • 1 Small Container of Greek Yogurt
  • Toothpicks 

Directions:

Using a toothpick to poke and hold onto the berries dip each berry into the greek yogurt then place on a cookie sheet insuring they do not touch, then stick into the freezer to harden. After a few hours you have an incredible low calorie treat! Enjoy!

Pinterest Fun Friday – Low Calorie Creamy Italian Dressing/Dip (10 Calories per Tablespoon)

Pinterest is one of my favorite sites. I can spend hours just looking around at all the crafty and innovative ideas that people come up with. It’s actually a terrible place for me to waste a lot of time. I can’t tell you how much inspiration I get from Pinterest and how many different pins I have tired. Each Friday I like to feature something I have crafted, cooked, or found on Pinterest that I love! 

This is a fantastic recipe that I can’t say enough about. The flavor is great and you can’t beat the fact that it’s less than 10 calories per tablespoon. I was honestly surprised with the outcome. I particularly love to use it as a dip for carrots and celery. It’s ridiculously easy to put together, very low in calories and a great go-to snack.

My one and only concern with this recipe is that Hidden Valley Ranch products have MSG in them which to me is a bummer. I am trying to avoid MSG if at all possible. Next time I make this dip/dressing I am going try to make it with a good dry homemade italian dressing mix or see if I can find something at Trader Joe’s.

Ingredients: 

  • 1 Envelope of Hidden Valley Ranch Farmhouse Originals Home-style Italian Dressing & Seasoning Mix (entire dry envelope 80 calories) 
  • 1 cup Plain fat free yogurt (I used Horizon Organic 110 calories)
  • ½ cup 2% milk (I used Central Market Organic 60 calories)

Directions: 

  1. Place all ingredients in a jar or a bowl and with whisk it together or give it a good shake.  
  2. Check the consistency to insure it’s what you are looking for. If you are using it for a dip you may want to use less milk for a salad dressing you may want to use more. 
  3. Allow to refrigerate overnight for the best flavor.
 
Total calories in the entire jar 250 calories.
Approximately 27 tablespoons
Less than 10 calories per tablespoon.

Now that the holidays are over I feel like I can finally get life in our house back to normal, and that means life at Colie’s Kitchen gets back to normal also. I must admit I am so excited that life will return to the way it was… Spending too much time on Pinterest!!!
